Born somewhere between Sête and Palavas, and later found across “le Midi” this meaty monkfish, poached in Noilly Prat vermouth, and served with garlic sauce is definitely one of my favourites dishes. To start your meal, a few grilled sardines, with a blue flesh potato salad and a suggested glass of Picpoul (not included in the price!) is a guaranteed winner!

Le Cassoulet
Carcassonne? Toulouse? Castelnaudary? where does it comes from? Who cares? The fact is every town, street, family, have their own recipe, and every one of them is better than the other. So here is my version, with duck, pork, lamb, Toulouse sausage and lingot beans. Start you meal with a confit duck, walnut and chicory salad, then enjoy your Cassoulet, you can always come back tomorrow for your dessert!!!

Le Pot-au-Feu
Mostly enjoyed in the haut Languedoc, this meat eater dish is now a classic of rustic cooking; Comfort food at its best.Slowly cooked selected pieces of lamb, veal and beef, with spring vegetables. Served with mustard, Camargue sea salt, and horseradish. Start your meal with the meat soup, garnish with bone marrow dumplings, then tuck into the meat and vegetables... and join your "Cassoulet friend", tomorrow for the pudding.
