As jwjlewis states, the fact that Negociants stays late is a real bonus. I think it is probably one of the few pubs/bars/cafes in Edinburgh where you can sit down and order food way past 10pm. I recently had a "Full Scottish Breakfast" there one morning. This consisted of bacon (x2), sausages (x2), hash brown, mushrooms, fried egg, black pudding, tomato and haggis. The standard was decent enough although the bacon did not look freshly cooked and was a bit dry.

The best thing about this place is that it is open late - till 0300 I think. Also, it is next to Assembly, so if you find a friend wants to go to Assembly, you can agree and then suggest somewhere different just as you arrive!
Good nachos.

Negociants is one of Edinburgh's oldest cafe/bars.
Situated close to Edinburgh university and a short walk from tourist spots such as the Chambers Street Museum and the old Kirkyard where Edinburgh Legend, Greyfriars Bobby, is buried, Negotiants is a great place to hang out.
Boasting a varied menu and reasonable prices this restaurant/bar is one of Edinburgh's best.
During the Edinburgh Festival Negociants can be very busy as it is situated directly across the road from the Udderbelly and Pleasance 2. If you are attending a show in either venue and fancy a meal before hand it is advisable to book a table. A word of warning though, your table may not be kept if you do not appear at the stated time.
